Meet Jay Lummus. He is the chef and co-owner of the Salt at the Silo House restaurant on MLK Blvd on the grounds of the Chicken Farm Art Center. In the upcoming issue of the Best Chefs America, Lummus was named one of the 250 best chefs in Texas.

Lummus graduated from Central High School in 1995 and has traveled the country since, from Denver, Colorado to Austin, Texas, he has been fine tuning his cooking craft and for the last two years has been operating right here in San Angelo.

Gabe Joseph is the C.O.O of Best Chefs America and he explained what it means to be selected as one of the states best chefs.

"It says that this chef is respected by their peers, by other chefs, as being a great cook, being the best cooks."

The book includes some of the biggest names in the culinary arts such as Thomas Keller and Jose Andres. Lummus said being mentioned along side those names in humbeling.

"I didn't really expect it and to be ranked with those people, you know hey, wow," Lummus said. "I've been doing this for 14 years now and I've never had really any professional training except for school and it's very cool to get recognized by my peers."

Lummus said that his goal was never to become a famous chef, his love of cooking and love of people he says have been the keys to his success.

"I like to cook but I also like to make people happy, so I get to do both at the same time," Lummus said. "I enjoy hearing 'Oh, it was great, I never had that.' It's nice to open people's minds and mouths to different things."

The Best Chefs America book will be released on March 1st.
